Quinoa Pizza Bites

Eating gluten free has left me a little disgruntled that I can’t readily get pizza.  The process of making dough seems daunting, but only because I haven’t done it before.  The problem with dough, is that even gluten free pizza dough is highly processed and I’m trying to focus on whole foods.

Enter the Quinoa Pizza Bite!  I found the original recipe from So Very Blessed and a Little Crazy’s blog.  I tweaked it a little based on what I had in my pantry.  Here is the recipe with my alterations

 

  • 2 cups cooked quinoa
  • 2 large eggs
  • 1 cup chopped onion
  • 1 1/2 cup shredded mozzarella cheese
  • 2 tsp minced garlic
  • 1/2 cup fresh basil, chopped
  • 1 cup fresh chopped tomato’s
  • 1/2 tsp seasoning salt
  • 2 tsp of McCormick’s Perfect Pinch Mediterranean Herb
  • 1 tsp dried crushed oregano
  • 2 tsp of pizza sauce (mixed in the quinoa)
1.  Preheat oven to 350 degrees.
2.  Mix together all ingredients, except pizza sauce, in a medium mixing bowl.
3.  Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
4.  Bake for 15-20 minutes. ( I found the longer you cook them, the better.  A nice crust forms making it easier to remove and keeps them from falling apart.
5.  Let cool before attempting to remove them from the pan.  (I know you’re going to want to pop them out immediately, but please do not attempt this.  You will burn your fingers, the bite will fall apart, and whatever makes it to your mouth will then burn your tongue, causing you to curse, and swear you will never make them again.)
These are absolutely AMAZING!!!!!  So flavorful, and pretty filling.  By eliminating the meat I saved myself a ton of calories, and fat!  You can experiment with other pizza veggies.  I can’t wait to try more with roasted red peppers, kalamata olives, and artichoke hearts!

P90X2 Day 16: Plyocide

I have to admit I almost skipped today’s workout! My stomach hasn’t been feeling great. I pushed play, and worked through it! It always amazes me how many challenges come up that cause me to want to skip my workouts. I pull inspiration from friends and fellow Beachbody coaches who find the strength to work through bad days, busy days, and more! Find your inspiration, and allow yourself to be motivated by like minded people! Their energy and example will help you reach your goals, and keep pushing play!

P90X2 Day 15: X2 Core

The start of week 3! Things are moving along! Aside from an unintentional slip up on the diet today, the gluten free diet is still going strong. I’m hoping that it doesn’t set me back too much! I can feel a difference within a few hours after eating the gluten. I’m not sure if it’s coincidence, or related. At any rate, I’m feeling good, staying with pretty ideal eating, and rocking my workouts!

P90X2 Day 13: Balance and Power

Nothing feels better than improvement! My balance is getting better on most exercises, and I can feel my strength improving as well! I’m down 5 lbs since beginning the program, and can see a remarkable difference in my legs and ab area! I’m LOVING this new program!
